S'More Cookies 

Chocolate Chip Cookie

8 Tbsp butter, melted and cooled 

1/2 cup sugar

1/4 cup lightly packed brown sugar

1 tsp vanilla

1 egg

1 1/2 cups flour

1/2 tsp baking soda

1/4 tsp salt

3/4 cup chocolate chips (I use the enjoy brand)

 

Topping

Mini-marshmallows

Extra chocolate chips + non-dairy milk for melting 

1 pack graham crackers for topping, crushed 

 

Make the chocolate chip cookies first. 

Preheat the oven to 350. 

Beat the butter and sugars until creamy.*

Add vanilla and egg. 

Beat 10-15 seconds, taking care not to over beat. 

Add flour, baking soda, salt, and mix. 

Add chocolate chunks and stir until combined. 

Roll dough into 12 balls. 

Bake 9-11 minutes. 

While the cookies are baking, place the graham crackers in a bag and crush them with a rolling pin. 

When the cookies come out of the oven, top with several mini-marshmallows. 

Turn the broiler on low or medium. 

Put the marshmallow topped cookies in the oven to toast the mallows. 

Watch the cookies closely--they'll only need 2 or 3 minutes under the broiler and will burn quickly. 

Remove the cookies from the oven and transfer them to a cooling rack. 

Allow the cookies to cool completely. 

While the cookies are cooling, melt the chocolate chips (I used a little more than half a bag).

Melt the chocolate chips in the microwave, 30 seconds at a time, mixing thoroughly until melted.

Add non-dairy milk to the chocolate until it is the consistency you'd like. 

You'll want the chocolate to be thinner to easily coat the cookies. 

Dip half of the cookie in the chocolate, then the graham cracker crumbs. 

Let the cookies set completely before enjoying. 

 

*You can use a stand mixer if you'd like, but it's not necessary. It's also easier to over-mix the batter if you're using a stand mixer. 

My Facebook feed is filled with videos of delicious baked goods. I recently saw one for s'more cookies. The cookies were simple--cookies made with store-bought chocolate chip cookie dough, topped with mini-marshmallows and dipped in melted chocolate and crushed graham crackers. I wanted to make my own version and they turned out better than I could've imagined. These were dangerous to keep in the house!
