Monday was my birthday, and my fiance--who doesn't bake--made my birthday cake! A couple of months ago, I joked about him making my cake. To my surprise, he actually agreed to it. Because he's not a baker, I wanted to find a recipe that wasn't too complicate. I turned to American Cake and started flipping through the decades.
The last cake I made was the blitz torte from 1917-1945. In order to find a cake that I thought Sam could make, I skipped a few decades and found the Cocoa-Cola cake. In 1959, the first Cocoa-Cola spice cake was seen in Texas. The cake traveled to Arkansas and Oklahoma by 1967. Like the Texas sheet cake, the Coca-Cola cake is fudgy and moist. The Cocoa-Cola cake also has marshmallows folded into the batter. The marshmallows add an extra layer of texture. Most of them rose to the top and toasted like a s'more. I liked the toasted mallow flavor under the chocolate frosting.
If I'm in the kitchen, I tend to take over--especially when it comes to baking. When Sam started to bake the cake, I decided to go upstairs and take a nap. I came down just in time to watch him burn the first batch of frosting. He recovered quickly and made a second batch like a pro.
Although I enjoy making my own birthday cake, it was nice to have someone make a birthday cake for me. I asked Sam if he'd ever made a cake from scratch before. The answer was no. He did a great job. I'm not sure he's ready to tackle a layer cake, but any time I want a sheet cake, I know who to ask!
2 cups flour
1 3/4 cups granulated sugar
1/2 cup earth balance butter, lightly salted
1/2 cup vegetable oil
3 heaping Tbsp cocoa powder
1 cup Coca-Cola
1/2 cup dairy-free buttermilk
1 tsp baking soda
2 tsp vanilla
1 1/2 cups mini marshmallows (or chopped marshmallows)
Preheat your oven to 350.
Grease a 13" x 9" baking pan and set it aside.
Combine the flour and sugar in a mixing bowl and set aside.
In a medium saucepan, bring the butter, oil, cocoa, and Coca-Cola to a boil over medium heat.
Bring it just to a boil and remove it from the heat.
Pour the cocoa mixture over the sugar and flour.
Mix with a wooden spoon until just combined.
Stir the baking soda into the buttermilk until it dissolves.
Add the buttermilk/baking soda to the batter.
Add the eggs and vanilla and mix until well combined.
Fold in the marshmallows.
Pour the batter into the prepared pan and bake for 30-35 minutes.
While the cake is cooling, make the frosting.
1/2 cup earth balance, lightly salted
3 heaping Tbsp cocoa powder
6 Tbsp Coca-Cola
3 cups powdered sugar, sifted
1 tsp vanilla
In a small saucepan over medium heat, combine the butter, cocoa, and Coca-Cola.
When the butter has melted and the mixture is just boiling, remove from the heat.
Pour the mixture over the powdered sugar and mix until smooth.
Add the vanilla and more powdered sugar to get the frosting to the consistency you'd like.
The frosting should be spreadable, but easy to pour onto the cake.
Frost the cake and let it cool for 20 minutes before slicing and serving.
