Make, Believe Bakery

One of my jobs is working as the Business Development & Marketing Associate for Art Restart--a social enterprise at The Gathering Place. As we welcomed the new year, my boss and I started brainstorming fundraising ideas. One of the best ways to get funding as a nonprofit is through grants. 

 

This week, I spent several hours at the central branch of the Denver Public Library using a grant database. I thoroughly enjoy researching and could've easily spent all day at the library. As it grew closer to 5, I felt the need for some caffeine; I knew it was time to call it quits. 

 

Because I'm cheap and hate paying for parking, I parked about a ten minute walk away from the library. On the walk back to my car, I passed City O' City--one of my favorite vegetarian, allergy friendly restaurants in Denver. Just next door to the restaurant was a sandwich board that read Make, Believe Bakery, etc. etc. etc. 100% VEGAN. I halted in front of the sign. If the employees inside the bakery saw me, I bet they chuckled at my reaction. It was as though the sign crashed into me and instead of being angry, a huge wave of excitement washed over me. I had to buy a cupcake. 

 

The girl behind the counter told me everything on the left side of the pastry case is gluten-free. I confirmed that everything was vegan; I couldn't hold back my excitement. While I managed to not drool all over the pastry case, I asked her when they'd opened. The bakers for City O' City, they'd always been there, just not open in this capacity. It felt like my lucky day. I bought a gluten-free vanilla espresso cupcake and a 12-oz. coffee and was on my way. 

 

The cupcake in front of me was massive. These cupcakes are no joke.

 

 

 

I dove into the frosting first. If you've ever had cappuccino ice cream, this frosting will remind you of the last time you ate the whole carton of the vegan version. It was not too sweet and had the perfect amount of coffee beans mixed in. The cupcake was the standard yellow cake. I couldn't figure out what gluten-free flour(s) they might've used, but the taste was pretty good. When I reached the middle of the cupcake, I discovered a vanilla filling! The cupcake label in the pastry case *might* have said filled, but I was focused on the espresso frosting and saw nothing else. The filling took the cupcake to the next level, making it seem more like a latte than just a shot of espresso. Although the filling was scrumptious and I enjoyed it, it wasn't completely necessary. In the end, I could've eaten half of the cupcake and been content. This is definitely the kind of cupcake that makes sharing dessert acceptable, and I never think it's acceptable to share dessert. 

 

If you're looking for a good cupcake--or are in the mood for a cookie, bread, etc.--take a walk to 214 E 13th Ave Monday–Friday between 10 a.m. and 6 p.m. or weekends between 9 a.m. and 5 p.m. Wether you're gluten-free, vegan, a combination of the two, or just love dessert, you won't be disappointed.
