Do you ever want it so bad that you binge eat your allergen and welcome the next several days of agony?
This is something I used to do regularly. As my dairy tolerance worsens, I've avoided allergen binging, but what about those treats you just can't deny?
New allergy-aware items hit the shelves every day. I don't have a problem finding milk alternatives, dairy-free chocolate chips, or even pizza. There is, however, one item lacking in the allergy-aware category: peanut butter cups.
Reese's contain milk; Justin's various nut butter cups contain milk; sun butter cups–a nut-free option–contains milk. Where are the dairy-free peanut butter cups?!
Since you can't find them at the store, I thought I'd give you the details on how to make your own.
Dairy-Free Peanut Butter Cups
1/2 cup creamy natural peanut butter (or your favorite creamy option)
1/2 cup powdered sugar
2 cups Enjoy Life chocolate chips
Line a muffin tin with cupcake wrappers.
Melt the peanut butter in the microwave (about 30 seconds). If you're using a natural peanut butter, you can probably skip this step. You want your peanut butter to be a bit on the runny side.
Add the powdered sugar to the peanut butter and stir until fully combined.
Set your peanut butter mixture in the fridge.
Microwave the chocolate chips for 30 seconds. Stir. Repeat until the chocolate is completely melted.
Put about one teaspoon of chocolate in the cupcake wrappers.
Roll a ball of peanut butter–enough to provide an equal chocolate-to-peanut butter ratio–and place it on top of the chocolate.
Cover the peanut butter with chocolate (about 1 1/2-2 teaspoons).
Place your peanut butter cups in the fridge and let them set (about 20-30 minutes).
If you're making regular sized peanut butter cups, this will make 8-10 depending on your desired chocolate-to-peanut butter ratio.
Eat them all yourself, or share a few with some friends. After all, your friends can just go to the store and buy things off the shelves; you deserve to eat as many homemade peanut butter cups as you want!
