Vegan Peanut Butter Chocolate Chip Cookies

*Makes about 20 cookies*

1 cup peanut butter

2/3 cup sugar

4 Tbsp applesauce

1 tsp vanilla extract

1/2 cup white whole wheat flour

1/2 tsp baking soda

pinch of salt

2/3 cup enjoy chocolate chips (I prefer mini)

Preheat your oven to 350 and line two baking sheets with parchment paper.

Mix together the peanut butter, sugar, apple sauce, and vanilla in a bowl--just use a spatula; there's no need for an electric mixer.

Add the flour, baking soda, and salt. Stir until just combined.

Fold in the chocolate chips.

Scoop a heaping tablespoon of cookie dough for each cookie to keep the size consistent.

These cookies won't flatten or spread. After rolling the dough into a ball, flatten each cookie to the desired cookie thickness.

Bake for 8-9 minutes.

The cookies will be light and look underdone, but trust me, you don't want to over bake them.

Leave them on the cookie sheets for at least 10 minutes before moving or you'll end up with cookie crumbs.

In case you didn't know, I am a peanut butter addict. As a kid, my favorite breakfast was a few peanut butter cups or a Reese's Fast Break (the nougat!). My favorite peanut butter is Peter Pan. It's not that Peter Pan is the best tasting peanut butter on the face of the Earth (although it's mighty good), but it's what I had growing up. Peanut butter preferences are dependent upon what your mom put in your peanut butter and fluff sandwiches.

I'm always on the lookout for peanut butter desserts. Pinterest showed me a recipe for oil free peanut butter chocolate chip cookies. I decided to double the recipe, which is what you have here, and I didn't use any fancy ingredients like natural peanut butter or organic sugar.

Cookie Notes:

1) When I say leave them on the cookie sheets for at least 10 minutes, this is crucial. Vegan baked goods have a tendency to be fragile--these are no exception. Allowing them to continue baking a bit on the hot cookie sheet helps them set.

2) If you're looking for a cookie that has a bit more of a cookie texture to it (think chewy, but in that fresh-baked oh-so-good way) keep looking. These cookies are more peanut butter dessert than traditional cookie.
