Butternut Squash Curry & Giant Chocolate Chip Cookies
Have you ever eaten a stuffed cookie? The idea hadn't crossed my mind until one of my friends from undergrad posted wendy kou's My Dessert Diet. The Giant Sprinkle Filled Chocolate Chip Cookie begged to be made in my kitchen.
I wanted to make these cookies, but I knew I had to have several people help me eat them. Luckily, my future mother and father-in-law visited. My matron-of-honor drove down from Mead and joined us for lunch and wedding dress shopping. Lunch was a necessity--nobody wants to be hangry while wedding dress shopping.
For once, I decided that dessert would wait until we returned from shopping and ate butternut squash curry before our adventure.
Butternut Squash Curry
1 cup water
3 cups peeled and chopped butternut squash
1 large broccoli crown
1 can chickpeas, drained and rinsed
28-oz diced tomatoes
2 cans lite coconut milk
2 gloves minced garlic
1 Tbsp fresh ginger
1 tsp ground turmeric
2 tsp soy sauce
1 tsp miso
Add all of the ingredients to a crock pot, and stir together.
Cook on high for 3-4 hours until the butternut squash cooks through and the curry has thickened.
Serve with rice on the side so you can have the perfect rice-to-curry ratio.
I said yes to the dress and got to ring the bell at David's Bridal. I was ready for some cookie.
My cookies looked much larger than the ones wendy kou has on Instagram. I'm not sure if I made them too big, or if they expanded because of some altitude voodoo.
Larger than I thought, they were just as delicious as I hoped with one exceptions: the chocolate cookie inside the chocolate chip cookie wasn't quite right. When I assembled my cookies, the chocolate chip cookie dough looked perfect--exactly like kou's. The chocolate cookie dough was another story. It was much wetter. Rather than add anything to the recipe, I decided to go with it. I wasn't able to have a perfect pocket of sprinkles in my cookie, but the sprinkles were still there. I had some leftover chocolate cookie dough and baked on their own, they were just fine. I'll have to work on my cookie stuffing technique for next time.
